Where It All Began
Hiawatha Osawamick, executive chef and owner of Hiawatha’s Catering, has spent nearly 15 years in the food service industry.
Beginning as a busgirl at Pat’s Café in her hometown of Wikwemikong, Ontario. Osawamick later moved to the city and worked for her mother’s catering business, Osawamick’s Family Tradition. From there she worked her way up the front-of-the-house ranks in top-rated, hotels and restaurants, including Casino Rama, Ontario’s only First Nations commercial casino. Hiawatha worked as a waitress, hostess, developing a breath of knowledge in classic table service, wines and sales.
Even early on, Osawamick was interested in the texture, color and flavor of the food she served. It was in those early days as a waitress that she decided she wanted to become a chef. Her opportunity came while working at Casino Rama. Osawamick grabbed the chance to learn culinary skills from one of Canada’s best chefs.
She worked nights in the hotel’s dining room and spent her days training and learning to cook through a culinary apprenticeship program offered by the Casino and Georgian College. In her off-hours, Hiawatha cultivated her passion for cooking and further developed her skills and understanding of the food business by working in all 9 of the Casino’s restaurant outlets, including Rinaldo’s Fine Dining Italian restaurant for many years.
Osawamick moved on up within Casino Rama from a server to Chef de Partie, from there she opened the food operation of the new 200-seat Buffet Restaurant, Osawamick trained and managed a kitchen staff of 25, developed a new menu every month, and fed quality meals to 1000’s people in a her shift.
Overseeing all aspects of production, budgeting, staffing, logistics and scheduling in order to feed 1000’s of people a day. In a matter of years she became a Banquet Chef de Partie, where she worked with large-scale events in the banquet industry.
In 2008, Executive Chef Hiawatha Osawamick began providing top-of-the-line service and food in the native cuisine industry. Word-of-mouth satisfaction has grown the business tremendously over the years since opening.
Today, Hiawatha’s Catering flourishes as the premiere catering service for aboriginal cuisine in Ontario. She’s now continuing her mother’s family tradition.
